CINNAMON MINI-MUFFINS

These are really easy to put together, and delicious! They taste like the French Madeleines, as they are inspired by them, soft, puffy and at the same time, a big resemblance with doughnuts that are rolled in cinnamon sugar. They will fly off your table, in all honesty. They lasted under 5 minutes in our house.

INGREDIENTS

  • 110 g all-purpose flour
  • 1,25 tsp baking powder
  • pinch of salt
  • 2 large eggs
  • 100 g coconut sugar or maple sugar
  • 2 tsp olive oil
  • 30 ml full-fat milk
  • 2 tsp vanilla extract
  • 75 g melted butter
  • 25 g coconut sugar or maple sugar
  • 1 tsp Ceylon cinnamon

DIRECTIONS

  1. In a little bowl, mix the Ceylon cinnamon and the 25 g coconut/maple sugar.
  2. In another medium bowl, mix the dry ingredients: flour, baking powder and salt.
  3. In a mixing bowl, add the 2 eggs and coconut/maple sugar and mix until lighter colour and fluffier. Add to this oil, milk and vanilla extract and mix well again. The add the melted butter and continue mixing.
  4. Then add one half of the flour mixture and blend well and gently, and proceed adding the second half, folding nice and gently. I still used my standing mixer for this but gently.
  5. Line a mini-muffins tray and pour about 2 teaspoons of batter in each. When ready…
  6. Bake at 180°C for 12 minutes.
  7. Take out and roll them in cinnamon sugar.

Enjoy with a big cup of milk, coffee, or rich soft hot chocolate. Let me know how you like these!
