These are really easy to put together, and delicious! They taste like the French Madeleines, as they are inspired by them, soft, puffy and at the same time, a big resemblance with doughnuts that are rolled in cinnamon sugar. They will fly off your table, in all honesty. They lasted under 5 minutes in our house.
INGREDIENTS
- 110 g all-purpose flour
- 1,25 tsp baking powder
- pinch of salt
- 2 large eggs
- 100 g coconut sugar or maple sugar
- 2 tsp olive oil
- 30 ml full-fat milk
- 2 tsp vanilla extract
- 75 g melted butter
- 25 g coconut sugar or maple sugar
- 1 tsp Ceylon cinnamon
DIRECTIONS
- In a little bowl, mix the Ceylon cinnamon and the 25 g coconut/maple sugar.
- In another medium bowl, mix the dry ingredients: flour, baking powder and salt.
- In a mixing bowl, add the 2 eggs and coconut/maple sugar and mix until lighter colour and fluffier. Add to this oil, milk and vanilla extract and mix well again. The add the melted butter and continue mixing.
- Then add one half of the flour mixture and blend well and gently, and proceed adding the second half, folding nice and gently. I still used my standing mixer for this but gently.
- Line a mini-muffins tray and pour about 2 teaspoons of batter in each. When ready…
- Bake at 180°C for 12 minutes.
- Take out and roll them in cinnamon sugar.
Enjoy with a big cup of milk, coffee, or rich soft hot chocolate. Let me know how you like these!
