PARMIGIANO THYME BUTTER CHICKEN THIGHS

Have you ever tried making infused butter? I can swear it improves the taste of any sort of meat you are willing to fry in it. All you have to do is have some room temperature butter and choose a herb to add to it. I added thyme this time (haha). You whip it and save it for later when you want to fry something in it.

Today I made chicken thighs fried in thyme butter. The recipe is not anything special, it’s just a simple easy way to enjoy chicken with a delicious European herb we’ve been using since ancient times for its special aroma, whether as incense, magical herb to aid sleep or giving good fortune to knights.

Ingredients

  • Chicken thighs
  • Dried thyme
  • Thyme butter
  • Salt
  • Smoked paprika
  • Onions
  • Parmigiano-Reggiano
I add the Parmigiano-Reggiano as soon as I get the chicken out of the frying pan. It just gives it an extra savory taste.

Directions

Heat up your pan with the thyme butter and add your chicken. Add smoked paprika and more dried thyme (I just happen to love thyme, but you can omit this extra it if you wish), add your onions julienne sliced. Add salt to taste. I like when the meat is well done but be careful so you don’t burn the onions. I can recommend, depending on your stove power, to add the onions halfway cooking your chicken.

Lastly, I serve it with a mix of salad and balsamic vinegar and a good amount of thick yoghurt or you can use crème fraiche mixed with basil pesto (this to enjoy the chicken with).
